Zucchini Pasta with Quick Tomato Sauce

When trying to decide what my first post would be I found myself struggling at where to start, there is just so much delightful food that I want to share with you! I decided to start simply for often when talking to people about healthy eating, I get that look. You know the one, the one that says well that’s nice for you but I just don’t have time for that. Nobodies got time for that! The truth is, we all have time for nourishing our bodies with good food and it actually is super easy.
I am going to start off with a simple recipe that takes no more than 15 minutes and uses simple, delicious ingredients. Zucchini, tomato, onion, garlic, olive oil, and a lemon!
You do need a spiralizer for this recipe, If you are in the market for a basic handheld one check out Amazon. They usually have them for around $7. I only have a handheld but love spiralizing so much that I am currently in the market for a more versatile appliance. I will let you know what I wind up purchasing. Enjoy this delicious meal!
Zucchini Pasta with Quick Tomato Sauce
Serves 2
Quick Tomato Sauce
2 tbs. Olive Oil
1 Small Onion, chopped
2 Cloves of Garlic, chopped
2 Tomatoes, chopped
1 tsp Basil and Oregano
Himalayan Sea Salt to taste
2 Medium Zucchini, Spiralized into pasta
2 Lemon wedges
In a pan heat the olive oil over medium heat until glistening. Add the chopped onion and let it cook until it is soft about 2 – 3 minutes. Add the garlic and toss for 1 minute until fragrant, throw in the chopped tomatoes, basil, oregano, and salt. Stir and then let cook until the tomatoes have softened and all of the ingredients have melded together, 3-4 minutes. Meanwhile, spiralizer the zucchini so you have some nice noodles for your sauce. Divide the noodles between 2 plates and top with your sauce. Take the lemon wedge and squeeze it over top for a little zing. Enjoy!
You can throw the zucchini in the sauce pan for a minute or two if you prefer your pasta to be a little softer. I do not cook my zucchini, I prefer al dente pasta and want to preserve all of the nutrients. When vegetables are cooked they lose some of their nutrients and become less alkaline forming.
